Mocha Kiss Cookies


Hahhaaaa.. i forgot about how the recipe named this cookies so I just give it a name myself ^.^

Well, it didn't have the strong coffee flavor and luckily I didn't dipped all the cookies on the coffee crystal+sugar as instructed. Cause the outcome is a little bit bitter (due to the coffee crystal) and my kids wouldn't like it.

So, I was smart enough to mix a little bit chocolate rice into the batter for some of the portion. And some of it, I put a chocolate chips on top. I would opt for the Daisy Mocha Cookies if compare to this.

Rich Mocha Cake


Really rich and I felt that the Kahlua measurement was a bit too much.
However, this was my 1st attempt trying out this recipe and I gotta follow what's instructed.


I decorated it with colorful sprinkles on top of the chocolate ganache.
Taste wise, personally I feel that I can use more espresso powder instead of Kahlua. I like the texture of the cake, at least this round, I didn't bake over the time it was instructed. The density was just nice and it was not crumble at all ^.^

I would definitely try out this cake with mousse, espresso-layered-mousse-cake perhaps!

Cake Fondant Ultra Chocolate


I just made a quick search over the internet and found this recipe. This was a simple-beatless-chocolate cake! Why I said so? Cause it requires no beating and all you need to do is to hand stir all the ingredients and pour them into baking pan!

The cake rather crumble, I suspected because I put it too long in the oven cause the skewer didn't turn out clean when I tested it. So, I put it longer for another 10-20 minutes, cover with aluminum foil (to prevent burning) @ a little bit higher temperature. The cracking was all over the cake and I do not know why cause no beating as in over-beat the cake, how come like tat? :P

I brought few pieces to office and let my colleagues tried it out. They all reverted the cake was too crumble and I checked out via internet, guess too high temperature+too long (baking time)!


Note added on 13 Nov 2009: I've tried to bake this 2nd times with the syrup pouring on top. Though the cake was not as crumble as the 1st attempt, but I just not able to achieve the color/look of the original version :(

I've tried using 2 smaller loaf pans and split the batter into these 2 pans. But the outcome was: top was harden & cracked like 1st attempt (not sure if it's due to the long-baking time. This round, I be a good gal and followed the instruction to bake @ 170C for an hour) and not as soft as the original version... *sad sad*.

The taste was as described: 'chocolatey' and melt in my mouth! Will try to check out with her and see if she can advise ^.^ *pray pray*

Chocolate Truffle


Another 1st attempt, I tried to prepare chocolate truffle ^.^

It was messy!!! But daughter loves it as she can lick as much as chocolate she wants after I finished rolling the chocolate truffle on my hand.

Taste wise, well it's all depends on whether you used a nice quality of chocolate or not. And I've used 2 bars of nice quality dark chocolate and of course it's NICE!!!

I'll try to prepare this again but not rolling it with hand. Wanted to find a recipe that all we need to do is to cut them into pieces instead.

Orange Layer Cake with Cream Cheese Frosting


1st version of orange layer cake and it was nIIIiiceeee...!!! Finished the 2nd day ^.^


This is a birthday cake I baked for my youngest one, his 1 year old birthday celebration. Actually today (20th) is the actual day and we decided to have another small celebration for him just ourselves and the gu-gu family that lives nearby.


We had a birthday party for him last weekend and many relatives and kids were invited. I ordered a durian cake from Prime Deli and it was so delicious and most of the ppl wanted 2nd piece.

Espresso Chocolate Cheesecake


Personally, I do not like cream cheese at all, so don't mention about eating a piece of cheesecake.

However, I believe I can find something that really can attract me ^.^ So, I took the challenge to bake a cheesecake.


The process was time consuming but not as messy as the frozen mocha cake. I tried a piece of it and .... I do not like the cheese-flavor.. hahahaa.. so, my maid will "settle" it for me cause she loves it!

I also give away few slices for my relative that lives nearby me as they basically like every type of food ^.^

Frozen Mocha Cake with Chocolate Ganache Glaze


1st version of frozen cake and it finished at the 3rd day ^.^ contented!

It was a lot of work preparing and making this but worth it! Having few problems during the entire process:

1. To assemble the entire cake as the filling is not cake-like batter, it was quite a "liquid" kind of mixture, thus needs to be very careful when preparing the pan and putting the cake layer on top of it.
2. To cut it out properly..as it was frozen and need more strength to cut it nicely. AND to move the piece out from the cake.
3. It would start melting after 5 minutes, thus we not able to take our own sweet time to finish it ^.^
4. First time putting the chocolate ganache on it. The chocolate getting thicken as we couldn't pour it on the cake when it's hot. So, kinda messy and I ended up just pour everything on the cake instead of following the instruction to cover it with thin layer, wait till set and cover with the rest of the chocolate.

well, will i be making this again? Yes and No. Yes if someone requested it, no if i got no time to prepare/bake it ^.^

Bittersweet Molten Chocolate Cakes with Coffee Ice Cream


This is amazing and yummy!!! By just looking at it, you would feel that this is so classy hoOOrr.. 1st bite, so-so... and the taste of bittersweet chocolate is not sweet (of course, that's why ppl say "bittersweet" mar) and a bit plain.....just chocolate lor...

buUUuuut then, when you eat it together with the coffee ice cream... omg! couldn't believe I actually made this :P hahahaaa..... i tried eating this together with other flavor of ice cream but find that coffee would bring out the best of it!

The good thing of this is you can make ahead the batter and put in the fridge, and when you want to eat it, just start the baking and serve in 15minutes!

I bought the souffle dishes from DAISO for S$2. I bought 4 in total and when I went back there to get few more, it's not available anymore.

Ingredients:
- 5T sugar
- 8 oz bittersweet, chopped (Ii used 1 250g 70% cocoa chocolate bar)
- 170g unsalted butter
- 3 eggs
- 3 egg yolks
- 1T plain flour

Optional:
- cocoa powder for dusting on the inner of ramekins after applying butter.
- mocha ice-cream

Method:
1. Greased ramekins generously and sprinkle inside of each ramekins with cocoa powder or sugar.
2. Stir chopped chocolate and butter in heavy medium saucepan over low heat till smooth. Remove from heat.
3. Beat eggs + egg yolks + 5T sugar till think and pale yellow around 8mins.
4. Fold 1/3 of warm chocolate mixture into (3) then fold remaining chocolate.
5. Fold in flour to (4).
6. Divide batter among ramekins (slightly more than half) (can be made 1 day ahead and cover with plastic and chilled. Bring to room temperature before continue.)
7. Preheat oven to 220C, place ramekins on baking sheet (to avoid spilling out) and bake uncovered until edges are puffed and slightly cracked but center 1" of each moves slightly when dishes shaken gently. around 13mins.



Dorayaki


Having a great fun with my daughter preparing the batter and bake dorayaki aka pancake?
She hurt herself few times due to the hot pan and finally give up :P blaming me for not telling her, but the last time that causes her to give up, she didn't blame anyone but herself not being careful ^.^ poor gal....

But the next day she wanted me to make this again..and I baked them into alphabets for fun.



Bittersweet Mocha Coffee Cake


This is my 1st version of mocha coffee cake. The only part is I mistaken the chocolate chips that mentioned in the recipe and used the "baking dark cocoa chips", causing all the chocolate chips melted in the bottom of the cake.



However, overall taste nice! The density was just nice. Will definitely bake this again WITH the correct chocolate chips!
