Chocolate Sponge Cake


The photo posted on Sweet Crumbs attracted me to try out this recipe ^.^, go take a look.

Weird huh... why this has became small tiny cupcake? hahaaa.. cause daughter wanted to help, so, I let her scoop the batter into the cupcake instead of pouring all the batter into 8"-pan :)

The texture and taste of the sponge cake was just nice, is a keeper. Not too sweet is the reason why I would note down the recipe here for future reference ^.^


Ingredients:
(A) Egg Yolk Mixture
- 3 egg yolks
- 50g sugar
- 120g self-raising flour *
- 1/2t baking powder *
- 1/2t baking soda *
- 50g canola oil
- 1t vanilla essence
mix together * and sift.

(B) Cocoa Mixture
- 30g cocoa powder
- 120g warm water
stir till smooth.

(C) Egg White Mixture
- 3 egg whites
- 1/4t cream of tartar
- 60g sugar

Method:
1. Mix (A) manually till well blended.
2. Add (B) mixture into (A) till well blended.
3. In another bowl, beat egg whites and cream of tartar at high speed for 1 min. Gradually add 60g sugar and beat till fluffy.
4. Fold (C) mixture in 3 batches into batter gently.
5. Pour batter in 8" square or round pan and bake at preheated oven @ 175C for 40-45mins.

Chocolate Banana Marble Cake


After so long, finally pick up the mood to bake "cake"... this round, because of the 3riped bananas hanging in the kitchen, thus trying to "utilize" it :P

The recipe called for buttermilk and the result was good! The texture was just nice. It's a keeper!


Ingredients:
- 1C mashed ripe banana
- 1/4C buttermilk @ room temperature
- 2t vanilla extract
- 2C sifted cake flour
- 1t baking soda
- 3/4t baking powder
- 1/4C cocoa powder
- 3T boiling water, plus more if needed
- 170g unsalted butter, softened
- 1C sugar
- 2 eggs at room temperature

Method:
1. Preheat oven @ 176C and position oven rack in center. Lightly greased loaf pan with melted butter and line with parchment.
2. Add buttermilk and vanilla into mashed banana and whisk till blended.
3. Sift cake flour, baking soda and baking powder in a medium bowl.
4. Place cocoa powder in small bowl and stir in boiling water till forms smooth paste - it should run thickly off the spoon. If too thick, add another T of boiling water. Set aside.
5. Place butter and sugar and beat @ medium speed till light and almost white in color (4-5mins). Turn to slow speed and add the eggs (1-by-1) till well blended.
6. Pour flour mixture and banana mixture alternately in 3 batches. Manually blend in by hand at last.
7. Transfer half batter to another medium bowl, add cocoa paste and gently blend into the batter.
8. Drop alternating spoonfuls of dark and light batters into prepared pan and marbleize by spoon. See figure below.
9. Bake for 55-65mins until firm to touch and toothpick inserted into the center of the loaf and comes out clean.

Dessert for the Day


I made this in the morning and it was "disappeared" the next day morning ^.^

I like the texture as it would melt in your mouth with chocolate flavor. Will try using bitter sweet chocolate next time ^.^

Classic Chocolate Cake

Just feel to eat chocolate cake and here you go:


A classic chocolate cake from Happy Home Baking.
According to the recipe, my cake should crack all over the top but it didn't :P But for sure, the taste is goOOod!!

Should have beautified my cake with icing sugar, but forgot about it :P

Kuih Bahulu


1st attempt on this cute cake for my sons, who are not feeling well but they surely love sweet cute little cake ^.^

This cake was not as hard as what we can get from NTUC. It was more spongy and I reduce the sugar so that it won't be too sweet for my kids. My grandma-in-law likes this too and said must do again for coming chinese new year.

Yule Log for Christmas

Hahahaa.. normally we won't purposely buy a yule log to celebrate Christmas. This year, I brave enough to try baking one ^.^ let's take a look:


Not bad for the 1st attempt hei.. :P You may notice there's little improvement on the rolling of the cake as I failed when trying out on the sugar roll and I remind myself to make the cake thinner so that it won't break ^.^

Coffee Sugar Roll


My 1st attempt trying out my favorite: Sugar Roll.
Result: GoOOood!!!

You may notice it's not successfully roll up as it tends to break. But the buttercream and texture of the roll was fantastic!

It was originally a vanilla flavour, but I replaced with little bit of coffee paste instead.

鸡蛋糕 - Chinese Traditional Cake




This recipe is so simple BUT... personally, I feel that it was a bit dry.
As you can see from the photos (except the lighting), the look & texture was perfect!

I will try out another recipe that use only a small bowl as measurement, let's see how it turns out ^.^

Taste-wise, I prefer this as not as dry as the previous one. Amazingly, this recipe only require: 1 bowl of flour, 1 bowl of eggs and 1 bowl of sugar ^.^

Lime Mousse Cake

Another attempt on trying out recipe from Aunty Yochana, this time >> Lime Mousse Cake.

The decoration of aunty's cake attracted me to try out this recipe. Part of it also because i wanted to bake citrus kind of flavor cake, so... dang dang dang dang....

Proudly presents here my 1st lime mousse cake, decorated by my daughter and me, of course lar... she 4 years old only, will not be able to line up the heartshape sprinkles, what's more, it will end up in her mouth :P

Ermh... I'm not a milk person and this cake gives me the taste of milk (guess I didn't pour enough of lime juice though I have already did pour 5 tbsp of lime juice from MARIGOLD - Peel Fresh Lime Juice) :P But it was fun decorating the cake with my daughter ^.^

Kiwi Shortcake


The original recipe was coming from Aunty Yochana ^.^ But I do not have strawberries, so I tried it out using kiwi.

I think the recipe was requesting me to cut the cake into 3 slices but I feel that my cake was too thick to stack up like aunty :( So, I cut the cake into 2 layers :P


My cake texture was dry though I just bake for 40minutes :( will check with aunty why is that so and hope there's a solution cause I intend to do strawberries one this coming weekend plus double up the whipped cream as well. My daughter said she likes pink/red, doesn't like green :P

Mocha Mousse Layered Cake


1st attempt on mousse cake, result? Too soft :P

The sponge cake was nice! But the mocha mousse is too soft even after putting in the fridge for a day :P Guess I've put too much of butter to the chocolate.

Question: Why I never follow the recipe on the amount of butter? Cause I was following a chocolate mousse recipe actually. But wanted to make it mocha by adding espresso powder. Then I "act-smart" lor, wanted to use up the whole packet of cocoa-block (200g, recipe call for 175g), so I added more butter lor... and also scare sweet, and added more bittersweet chocolate droplets! So, end up... too soft lor :P

Will certainly try this again, with the correct measurement for sure!! Why? Because of them...


Lemon Chiffon Cake


hahaaa.. another flavor to add into my chiffon cake collection. This round, I presented LEMON chiffon cake ^.^

Actually I bought the lemon for another cake recipe. But the cornmeal needed was spoilt, so have to think of other recipe that uses the fresh lemon juice.

It doesn't really give us the strong lemon flavor but it does give light refreshing taste!

4 Layered Mocha Cake


A very interesting recipe. It was supposed to be 12 layered cake but I think it would be very hard to eat, so I didn't go for 12 ^.^ 4 layered, to be exact, it should call 6 layered including the mocha buttercream and chocolate buttercream :D









My lovely daughter helping me with the decoration, her favorite part in baking:


The cake was very soft and believe it or not, it didn't call for butter except for the buttercream <-- which obviously need BUTTER :)

The mocha flavor was just nice and the meringue layer was so special with the walnuts & peanuts (original calls for pecan ONLY but I've no pecan, so using walnut + grated peanuts instead), it gives a special crunchy bite ^.^

It was simple but need a lot of time to prepare. I will want to try out the chocolate mousse cake next!

Lemon Raisin Cake

Like usual, wanted to try out something other than chocolate or espresso ^.^


This is a very refreshing cake and the original version didn't call for raisin. I added raisin to "attract" my lovely kids, hahahaaa... I cut down the butter cause do not want the butter flavor overtook the lemon =)

The cake was moist, dense and taste gOOood! Will keep this for sure!

Espresso Chiffon Cake

I've been thinking to try other flavor of chiffon cakes, not orange nor pandan. I like both Chocolate and Coffee/Espresso but I just tried out the Cake Fondant Ultra Chocolate, so take the challenge/courage to try out espresso version of chiffon cake ^.^

The result:
hahahaaa.. look nice, taste of espresso not that strong as expected :P


Will I try it again? Yes, with chocolate version ^.^

Sour Cream Coffee Cake

Well, same like others... the recipe didn't call for coffee/espresso but still, it's a coffee cake. I've checked out many recipes but the traditional coffee cake really didn't call for what we thought it should be. In fact, it calls for "cinnamon" =)

My 1st attempt of trying out this recipe because of the great review from others. So, decided to try it out and see if they are just too "friendly" to give nice review or it really deserves it ^.^

Let's take a look of the outer-beauty:

Well, it raised up beautifully and the "interface", including the look&color is just perfect! My kids just keep biting the streusel topping and keep saying "ermMMmmm... niiIiice..." So, you know how the result goes ^.^ contented!

The texture was moist but yet not too dense and the main focus was on the streusel as it gives you a good-bite out of normal cake-like piece of coffee cake =)

The only thing I gotta say is.. it will make you full with just a piece of it! Give a try and you wouldn't regret about it!
