Suppose to look like egg-shelf chocolate cookies


I'm not able to re-locate the recipe, too bad. This cookies should look more beautiful, I should say, it should look beautiful but I was failed to do so :P

It should look like having egg-shelf covering and cracking a bit. But what I have was rough rough surface :P

Classic Chocolate Cake

A classic chocolate cake from Happy Home Baking.
According to the recipe, my cake should crack all over the top but it didn't :P But for sure, the taste is goOOod!!

Should have beautified my cake with icing sugar, but forgot about it :P

Kuih Bahulu


1st attempt on this cute cake for my sons, who are not feeling well but they surely love sweet cute little cake ^.^

This cake was not as hard as what we can get from NTUC. It was more spongy and I reduce the sugar so that it won't be too sweet for my kids. My grandma-in-law likes this too and said must do again for coming chinese new year.

Yule Log for Christmas

Hahahaa.. normally we won't purposely buy a yule log to celebrate Christmas. This year, I brave enough to try baking one ^.^ let's take a look:


Not bad for the 1st attempt hei.. :P You may notice there's little improvement on the rolling of the cake as I failed when trying out on the sugar roll and I remind myself to make the cake thinner so that it won't break ^.^

Coffee Sugar Roll


My 1st attempt trying out my favorite: Sugar Roll.
Result: GoOOood!!!

You may notice it's not successfully roll up as it tends to break. But the buttercream and texture of the roll was fantastic!

It was originally a vanilla flavour, but I replaced with little bit of coffee paste instead.

Sesame Seed + Sunflower Seed Biscuit


Trust me! This is delicious-yummy! I have marked this down to bake again for coming chinese new near ^.^

So, here's the recipe from 平平凡凡,简简单单:
>> 120g butter + 90g(--) brown sugar = double-boiler and stir well.
>> Add 1 egg + 1 tsp pandan extract
>> Sift(180g plain flour + 1 tsp baking powder) and slowly add into batter
>> Add 1 nescafe packet or 1 full tsp nescafe powder
>> Add 40g ground almond, 40g sunflower seed, 10g black sesame seed, 10g white sesame seed
>> roll into ball and flatten
>> 160C/15mins


Sesame Seed Soda Biscuit


I choose to bake this cookies cause the steps were so simple. But after the 1st batch was "tested", I decided to add chocolate rice into the batter and luckily I do that!


It was very hard, not sure if I didn't make it thin enough. But I feel that this is not suitable for my kids :P So, the adults gets to enjoy the cookies only :P

Mocha Walnut Cake

Taste too "eggy" but overall very spongy!

Skinny Crispy Oatmeal Chocolate Chunk Cookies


Believe me, this cookies really nice! You gotta try it out!


Here's the recipe from Cake On The Brain:
* 1 cup all-purpose flour + 3/4 tsp baking powder + 1/2 tsp baking soda + 1/2 tsp salt = in a medium bowl

* 14 tbsp/200g(--) unsalted butter(softened) + 1 cup sugar + 1/4 cup light brown sugar=20sec(low)+1min(high)

* 1 large egg + 1 tsp vanilla extract = add into butter mixture 30sec(medium)
* Add in flour mixture @ low speed for 10sec
* 2 1/2 cups old-fashioned rolled oats = add into batter @ low speed for 20sec
* 1 cup dark chocolate chunks = add into batter @ low speed.
* Finally, stir using spatula to ensure no flour pocket remain.

350F/180C~10-13mins

鸡蛋糕 - Chinese Traditional Cake




This recipe is so simple BUT... personally, I feel that it was a bit dry.
As you can see from the photos (except the lighting), the look & texture was perfect!

I will try out another recipe that use only a small bowl as measurement, let's see how it turns out ^.^

Dang dang dang dang.... here come another recipe:


Taste-wise, I prefer this as not as dry as the previous one. Amazingly, this recipe only require: 1 bowl of flour, 1 bowl of eggs and 1 bowl of sugar ^.^

Buttermilk Pancakes


Nice & spongy pancakes!

Wow, this is really spongy and taste just nice! Very simple recipe and with my daughter's favorite chocolate chips, it certainly the best choice for breakfast or tea break ^.^

I better write down the recipe here so that it can be referred easily:

Ingredients:
# 240g self-rising flour* + 1/4 tsp baking soda --> sift in a bowl
@ 1/4 tsp salt
@ 50g sugar*
@ 375ml buttermilk* (1ml = 1g)
@ 2 eggs* lightly beaten
@ 4 tbsp corn oil/canola oil/sunflower oil*
@ 1/2 vanilla essence

Steps:
1. Add all @ ingredients into # and stir still smooth.
2. Use a 1/3 cup (greased with butter so that batter will not stick on cup while pouring to pan for baking, optional) to scoop the batter and pour on pan.
3. You may put your favorite chocolate chips on top of the batter.
4. DO NOT press the pancake, just wait patiently till you see air-bubbles popping out on the surface.
5. Flip the pancake and cook for a little while (around 40sec - 1mins).
6. Please adjust the heat accordingly ^.^

Half the ingredients marked * if you just want to make 6-8 8cm pancakes

Kueh Bangkit


Baked this set of cookies for the youngest one as it will melt in his mouth! This is my daughter & grandma-in-law's favorite too! Another recipe from Aunty Yochana ^.^

Not sure if I use the mold like aunty's one would it be better? As I found it would be better if it can be a little bit "fluffy"?

Lemon Cupcakes


Forgot already where I got this recipe from but as I mentioned earlier, wanted to try out citrus flavor cake... so, here what I got ^.^

Actually last weekend I planned to visit a friend of mine. She was celebrating her grandma's birthday and invites me and my daughter to join. So, I decorated few of the cupcakes with colorful sprinkles and chocolate chips for the girls (her 2 lovely daughters and my daughter).

But my 2 naughty boys were giving my trouble and didn't take their nap till 5pm. It would be very hard for my maid to entertain the boys at 9pm later as the boys would still be very energetic by then.

If they take their nap like usual, around 2pm, by 9plus @ night, the youngest will need to "re-charge battery" (sleep) already. So, my maid only need to entertain the big boy.... So, end up, I didn't go :(


But I promised my friend that I will bake strawberries shortcake and few cupcakes for her girl's coming birthday ^.^

Lime Mousse Cake

Another attempt on trying out recipe from Aunty Yochana, this time >> Lime Mousse Cake.

The decoration of aunty's cake attracted me to try out this recipe. Part of it also because i wanted to bake citrus kind of flavor cake, so... dang dang dang dang....

Proudly presents here my 1st lime mousse cake, decorated by my daughter and me, of course lar... she 4 years old only, will not be able to line up the heartshape sprinkles, what's more, it will end up in her mouth :P

Ermh... I'm not a milk person and this cake gives me the taste of milk (guess I didn't pour enough of lime juice though I have already did pour 5 tbsp of lime juice from MARIGOLD - Peel Fresh Lime Juice) :P But it was fun decorating the cake with my daughter ^.^

Kiwi Shortcake


The original recipe was coming from Aunty Yochana ^.^ But I do not have strawberries, so I tried it out using kiwi.

I think the recipe was requesting me to cut the cake into 3 slices but I feel that my cake was too thick to stack up like aunty :( So, I cut the cake into 2 layers :P


My cake texture was dry though I just bake for 40minutes :( will check with aunty why is that so and hope there's a solution cause I intend to do strawberries one this coming weekend plus double up the whipped cream as well. My daughter said she likes pink/red, doesn't like green :P

Ice Cream

Shake! Shake! Shake! Here comes ice-cream:


Well, I was the one that did a lot of the shaking compare to my daughter, who complaint the package was very heavy for her :P

I found this from youtube website on making ice-cream without using machine ^.^ So wanted to try it out with my daughter and it really amazing!

Just that it melts so fast the moment I rinse the zip lock bag (cause salt was sticking all over) and squeeze out the ice-cream, it was already melted a bit :P

Coffee Bun


1st coffee bun from the house ^.^

And I have two helpers with my sifting of flour and kneading of batter:


hahahaa.. the outcome was a bit hard but eatable lar.... hahahaa guess need a lot of improvement. I'm planning to make this again this weekend! Hopefully I will get a better result.

Mocha Mousse Layered Cake


1st attempt on mousse cake, result? Too soft :P

The sponge cake was nice! But the mocha mousse is too soft even after putting in the fridge for a day :P Guess I've put too much of butter to the chocolate.

Question: Why I never follow the recipe on the amount of butter? Cause I was following a chocolate mousse recipe actually. But wanted to make it mocha by adding espresso powder. Then I "act-smart" lor, wanted to use up the whole packet of cocoa-block (200g, recipe call for 175g), so I added more butter lor... and also scare sweet, and added more bittersweet chocolate droplets! So, end up... too soft lor :P

Will certainly try this again, with the correct measurement for sure!! Why? Because of them...


Mocha Cookies, miaow~!


Originally, this was not a mocha cookies. When I finished mixing the batter, the buttery flavor was so strong that I have to do something about it!

hahahaa... so, I put a few drops of coffee flavor and some chocolate rice and the result? Great!My daughter can finish 6 cookies @ ONE-GO!!!

See the picture showing my two helpers busy with the cat-cookie-cutter! One trying to do it properly, seriously. Another, anyhow anyway ^.^ End up, daddy said "come on! go pom-pom! (bath)" Then I got back my cookie-cutter and finish the rest ^.^

Lemon Chiffon Cake


hahaaa.. another flavor to add into my chiffon cake collection. This round, I presented LEMON chiffon cake ^.^

Actually I bought the lemon for another cake recipe. But the cornmeal needed was spoilt, so have to think of other recipe that uses the fresh lemon juice.

It doesn't really give us the strong lemon flavor but it does give light refreshing taste!

4 Layered Mocha Cake


A very interesting recipe. It was supposed to be 12 layered cake but I think it would be very hard to eat, so I didn't go for 12 ^.^ 4 layered, to be exact, it should call 6 layered including the mocha buttercream and chocolate buttercream :D









My lovely daughter helping me with the decoration, her favorite part in baking:


The cake was very soft and believe it or not, it didn't call for butter except for the buttercream <-- which obviously need BUTTER :)

The mocha flavor was just nice and the meringue layer was so special with the walnuts & peanuts (original calls for pecan ONLY but I've no pecan, so using walnut + grated peanuts instead), it gives a special crunchy bite ^.^

It was simple but need a lot of time to prepare. I will want to try out the chocolate mousse cake next!

Lemon Raisin Cake

Like usual, wanted to try out something other than chocolate or espresso ^.^


This is a very refreshing cake and the original version didn't call for raisin. I added raisin to "attract" my lovely kids, hahahaaa... I cut down the butter cause do not want the butter flavor overtook the lemon =)

The cake was moist, dense and taste gOOood! Will keep this for sure!

Mocha Muffins with Chocolate Chips & Pecan



All I can say is.... my kids love this!

The only thing I will change next time if I want to bake this: Should use a smaller muffin cup cause for a kid, it's too much I guess ^.^ The espresso smell was so nice and the chocolate chips was the attraction to have another bite :)

Let's that a look of the inner beauty of the muffin =) I will definitely make this again very soon!

Espresso Chiffon Cake

I've been thinking to try other flavor of chiffon cakes, not orange nor pandan. I like both Chocolate and Coffee/Espresso but I just tried out the Cake Fondant Ultra Chocolate, so take the challenge/courage to try out espresso version of chiffon cake ^.^

The result:
hahahaaa.. look nice, taste of espresso not that strong as expected :P


Will I try it again? Yes, with chocolate version ^.^

macaroon oh macaroon

I wanted to try out this long ago but do not have the time and found it tedious to prepare as it needs to be sandwiched with chocolate ganache.

But well, my precious daughter just pick this recipe out of all stack of the papers and wanted to bake this with me. What can I do? Do lor... bake lor....

Hahaaa.. here's the photo of her helping me to pipe the macaroon on the parchment paper and the output:



I didn't prepare the chocolate ganache although I've a bowl of leftover when I baked the mocha cake cause I found it would be too sweet for kids.

Moment of truth: well, I wouldn't try to bake this not because it was not nice, but the effort. Taste like a chocolate almond cookies due to the almond ingredient it called.

Sour Cream Coffee Cake

Well, same like others... the recipe didn't call for coffee/espresso but still, it's a coffee cake. I've checked out many recipes but the traditional coffee cake really didn't call for what we thought it should be. In fact, it calls for "cinnamon" =)

My 1st attempt of trying out this recipe because of the great review from others. So, decided to try it out and see if they are just too "friendly" to give nice review or it really deserves it ^.^

Let's take a look of the outer-beauty:

Well, it raised up beautifully and the "interface", including the look&color is just perfect! My kids just keep biting the streusel topping and keep saying "ermMMmmm... niiIiice..." So, you know how the result goes ^.^ contented!

The texture was moist but yet not too dense and the main focus was on the streusel as it gives you a good-bite out of normal cake-like piece of coffee cake =)

The only thing I gotta say is.. it will make you full with just a piece of it! Give a try and you wouldn't regret about it!

Mocha Kiss Cookies


Hahhaaaa.. i forgot about how the recipe named this cookies so I just give it a name myself ^.^

Well, it didn't have the strong coffee flavor and luckily I didn't dipped all the cookies on the coffee crystal+sugar as instructed. Cause the outcome is a little bit bitter (due to the coffee crystal) and my kids wouldn't like it.

So, I was smart enough to mix a little bit chocolate rice into the batter for some of the portion. And some of it, I put a chocolate chips on top. I would opt for the Daisy Mocha Cookies if compare to this.

Rich Mocha Cake


Really rich and I felt that the Kahlua measurement was a bit too much.
However, this was my 1st attempt trying out this recipe and I gotta follow what's instructed.


I decorated it with colorful sprinkles on top of the chocolate ganache.
Taste wise, personally I feel that I can use more espresso powder instead of Kahlua. I like the texture of the cake, at least this round, I didn't bake over the time it was instructed. The density was just nice and it was not crumble at all ^.^

I would definitely try out this cake with mousse, espresso-layered-mousse-cake perhaps!

Cake Fondant Ultra Chocolate


I just made a quick search over the internet and found this recipe. This was a simple-beatless-chocolate cake! Why I said so? Cause it requires no beating and all you need to do is to hand stir all the ingredients and pour them into baking pan!

The cake rather crumble, I suspected because I put it too long in the oven cause the skewer didn't turn out clean when I tested it. So, I put it longer for another 10-20 minutes, cover with aluminum foil (to prevent burning) @ a little bit higher temperature. The cracking was all over the cake and I do not know why cause no beating as in over-beat the cake, how come like tat? :P

I brought few pieces to office and let my colleagues tried it out. They all reverted the cake was too crumble and I checked out via internet, guess too high temperature+too long (baking time)!


Note added on 13 Nov 2009: I've tried to bake this 2nd times with the syrup pouring on top. Though the cake was not as crumble as the 1st attempt, but I just not able to achieve the color/look of the original version :(

I've tried using 2 smaller loaf pans and split the batter into these 2 pans. But the outcome was: top was harden & cracked like 1st attempt (not sure if it's due to the long-baking time. This round, I be a good gal and followed the instruction to bake @ 170C for an hour) and not as soft as the original version... *sad sad*.

The taste was as described: 'chocolatey' and melt in my mouth! Will try to check out with her and see if she can advise ^.^ *pray pray*

Chocolate Truffle


Another 1st attempt, I tried to prepare chocolate truffle ^.^

It was messy!!! But daughter loves it as she can lick as much as chocolate she wants after I finished rolling the chocolate truffle on my hand.

Taste wise, well it's all depends on whether you used a nice quality of chocolate or not. And I've used 2 bars of nice quality dark chocolate and of course it's NICE!!!

I'll try to prepare this again but not rolling it with hand. Wanted to find a recipe that all we need to do is to cut them into pieces instead.

Orange Layer Cake with Cream Cheese Frosting


1st version of orange layer cake and it was nIIIiiceeee...!!! Finished the 2nd day ^.^


This is a birthday cake I baked for my youngest one, his 1 year old birthday celebration. Actually today (20th) is the actual day and we decided to have another small celebration for him just ourselves and the gu-gu family that lives nearby.


We had a birthday party for him last weekend and many relatives and kids were invited. I ordered a durian cake from Prime Deli and it was so delicious and most of the ppl wanted 2nd piece.

Espresso Chocolate Cheesecake


Personally, I do not like cream cheese at all, so don't mention about eating a piece of cheesecake.

However, I believe I can find something that really can attract me ^.^ So, I took the challenge to bake a cheesecake.


The process was time consuming but not as messy as the frozen mocha cake. I tried a piece of it and .... I do not like the cheese-flavor.. hahahaa.. so, my maid will "settle" it for me cause she loves it!

I also give away few slices for my relative that lives nearby me as they basically like every type of food ^.^

Frozen Mocha Cake with Chocolate Ganache Glaze


1st version of frozen cake and it finished at the 3rd day ^.^ contented!

It was a lot of work preparing and making this but worth it! Having few problems during the entire process:

1. To assemble the entire cake as the filling is not cake-like batter, it was quite a "liquid" kind of mixture, thus needs to be very careful when preparing the pan and putting the cake layer on top of it.
2. To cut it out properly..as it was frozen and need more strength to cut it nicely. AND to move the piece out from the cake.
3. It would start melting after 5 minutes, thus we not able to take our own sweet time to finish it ^.^
4. First time putting the chocolate ganache on it. The chocolate getting thicken as we couldn't pour it on the cake when it's hot. So, kinda messy and I ended up just pour everything on the cake instead of following the instruction to cover it with thin layer, wait till set and cover with the rest of the chocolate.

well, will i be making this again? Yes and No. Yes if someone requested it, no if i got no time to prepare/bake it ^.^
